Description
Poongar Rice, a cherished heirloom red rice native to Tamil Nadu, holds a special place in traditional Indian agriculture and holistic wellness. Renowned for its resilience to climate variations, this ancient grain has been cultivated for generations using natural, chemical-free farming practices. The unpolished grain retains its protective red bran layer, which imparts a subtle earthy aroma, a rich nutty flavor, and a satisfying texture to everyday meals.
In traditional kitchens, Poongar Rice is celebrated for its versatility and delicate flavor profile. When steamed, it serves as a nutritious base for everyday curries, traditional dals, rasam, and vegetable dishes. Its fine texture makes it exceptionally popular for soaking and grinding into batter for soft idlis, crispy dosas, and appams. Additionally, it can be slow-simmered with water and mild spices to create a soothing kanji or porridge that provides comforting nourishment throughout the day.
How to
Use
1. Rinse the rice thoroughly 2 to 3 times in fresh water until clean.
2. Soak in water for 1 to 2 hours to soften the unpolished grain and shorten cooking time.
3. Add 1 cup of soaked rice to 3 cups of water in a heavy-bottomed pot or pressure cooker.
4. Pressure cook for 4 to 5 whistles on medium flame, then allow the pressure to release naturally.
5. Serve warm alongside curries, traditional lentils, rasam, or stir-fried vegetables.
6. Grind soaked rice with urad dal to make traditional batter for soft idlis and crisp dosas.
Storage
Instruction
Store in a clean, airtight container in a cool, dry place away from direct sunlight and moisture, adding a few dry bay leaves to naturally protect the unpolished grains.
