Palakkad Matta Rice, also known as Rosematta or Kerala Red Rice, is an iconic traditional grain originating from the dense black cotton soils of the Palakkad region. Cultivated through chemical-free farming and processed using the ancient technique of parboiling with the outer bran layer intact, this unique grain retains a distinctive pinkish-red hue, a robust earthy aroma, and a satisfyingly plump, chewy texture. Unlike heavily polished white varieties, parboiling locks essential vitamins and macro-minerals deep within the grain core, making it an irreplaceable dietary superfood for overall heart, bone, and digestive health.

How to
Use
1. Rinse the rice thoroughly 2 to 3 times in fresh water.
2. Soak in clean water for at least 45 to 60 minutes to soften the thick parboiled grain and reduce cooking time.
3. Open Pot Method: Cook 1 cup of soaked rice in 6 to 8 cups of boiling water for 30 to 40 minutes until tender, then drain excess water.
4. Pressure Cooker Method: Add 1 cup of soaked rice to 3 to 4 cups of water and cook for 5 to 6 whistles on medium flame.
5. Serve steaming hot alongside traditional spicy fish curry, sambar, rasam, or coconut-based gravies.
6. Blend soaked rice with white rice to make high-fiber puttu flour, appams, or rustic idli-dosa batter.
